I've made a whole load of displacement mapped walls, and perhaps stupidly made them into func_detail entities. I get the impression that this is what's stopping the map from working. Is there any way I can remove their status as entities and turn them back into brushes, rather than having to do all the work again?

Yep. Move to World does the trick (Ctrl + Shift + W). And indeed, displacement maps can't be entities.

Wonderful! I noticed that option, but I suppose I can't have tried it. Thanks a lot. I ended up just remaking it all in the mean time, and I actually like it more now. Anyway, that's going to be really useful, so again thanks.
