I cannot find information on this anywhere.
How does the collapsing smokestack work in Route Kanal?
I notice it is a prefab model, with separate models for its gibs.

Go to place entity, probably prop_physics or prop_physics_multiplayer, then go to [ROOT]\animated_breakable or something along those lines and there is a smokestack in there that should work. <I'm doing this off the top of my head though so you might need to dig a bit>
