how do I make double doors? You know, those that open in the middle.
They should look like double doors you have at schools or offices, in
case you were going to suggest a model.

(I found one in props_c17 but the wooden door texture doesn't show and it's got a glass window in it, which officially sucks)

By the by, I made a door the other day and applied a door texture on
both sides. Yet the textures were identical, so the door knob is on
right side, no matter from what direction you look at it. Of course,
the door knob should be right from one side and left on the other. How
do I fix?

http://www.snarkpit.net/editing.php?page=tutorials&game=HL2&id=133 just like that, only two of them.

If you want them to only rotate one direction then you will have to check the flag <span style="color: orange;">one way <span style="color: white;">this will make them rotate in only one direction. You will then have to check one of the doors to reverse direction. To figure this out you have to first of all know, doors rotate counter-clock wise when they are set to one way.
So all you have to do is look at them in your top down view and figure
out which of the two doors needs to swing clock wise and set that door
to reverse direction.

Then to get the textures lined up, build your doors, apply your
textures then select all four door textures (in this case, the front
and back of both doors) and check the align to world box. This will set all the textures to align to a global X,Y,Z alignment and thus they will all face the same direction.
