i'd never heard of this before, never mind used it. but a quick look at the faq page on it's homesite would suggest that the 'make avi' option hasn't been enabled yet.
Q: Will it be possible to directly create AVI files?
A: Yes, with audio (hopefully). You will click on a "Create AVI..." option and receive your desired file for a demo. You will still need a HL installation.
the 'hopefully will be' sort of gives it away.

There are hundreds of guides for creating AVIs from demos.

There are two main methods

1. When playing the demo, use the startmovie command in Half-Life to
make a bmp for every frame recorded, then use a program such as
Vidoemach to put the frames together into an AVI.

or

2. Use a program such as Fraps (http://www.fraps.com) to make the AVI direct from the demo, with sound.

www.virtualdub.org works better for slapping BMP's together.

after creating the demo's bmp's I highly suggest using either after effects or premiere to piece the parts together. It is more reliable in my opinion and you are allowed to do special effects, sound, music, ect to your video for final touches. These are the programs I use for doing demo's of my maps and putting them onto my portfolio dvd's.
