Are you expecting us to give you the magic answer that you won't need to learn to code in something similar to C++? Sorry, it don't work that way. Doing anything to the code requires coding, simple as that.
That's not to say you can't learn to code, however. Still, there's a bit more work to coding than just bopping around for a day.

Just to clarify, do you mean edit the appearance of the weapon models, or the actual properties of the weapons? e.g make them more powerful; faster firing etc.

Basic changes to the weapon values are often easy - like power, rate of fire, default ammo etc. Often all you have to do is find a number and change it.
It's much more difficult to start coding new behaviour into them.

To change the apperance of a gun, you need to model a new one. Get some model tools like milkshape 3D and s**t.
